Lemon and lavender is a wonderful combination. It combines the fragility and freshness of childhood, carefree days and laziness. These fluffy and very fast biscuits are perfect for baking with children. In this recipe, little helpers are very welcome! And if there are lavender lovers among you, know that you must try these cookies. They are very aromatic and every bite will conjure a smile on your face.

2 whole eggs
125 g butter
½ cup of cane sugar
1 ½ cup flour
2 teaspoons baking soda
1 tablespoon dried lavender flowers (thanks to it, the biscuits will gain a very subtle spice)
grated peel of Organic lemon
On the glaze
½ cup of powdered sugar (can also be cane – icing will crunch more)
2 tablespoons Organic Lavender water
freshly squeezed lemon juice
grated peel of Organic lemon
Method
First, leave the butter and eggs at room temperature for about an hour. Then beat the eggs in a smaller container with softened butter and cane sugar until the mixture is completely smooth. Sift the flour into a larger bowl and mix it with the baking soda. Both support the final breathiness. Grate fresh lemon peel. Ideally made from organic lemon. I grow lemons on the terrace, so I have a year-round supply of chemically untreated yellow beauties. (Alternatively, you can buy dried organic lemon peel.) Add half of the grated bark to the flour bowl and leave the other half on the icing. Finally, grind 1 tablespoon of dried lavender flowers in the palm of your hand and mix. Now combine the egg mixture with the dry one. A spoon is enough. A robot is not needed here.
Preheat the oven to 190 degrees. Line the baking sheet with baking paper and use a spoon to make round biscuits. Always apply the same amount directly to the sheet. If you want them flat, push the center of them with your finger. Be sure to leave enough space between the pieces. They will be very fluffy and will spread on the plate. Bake for about 10 minutes.
After pulling, let it cool down, if the children can withstand it. And in the meantime, prepare the icing. In a smaller bowl, mix the sugar, freshly squeezed lemon juice (add gradually), the remaining lemon peel and 2 tablespoons of Organic Lavender water with a fork. Apply the thicker mixture to the cooled biscuits and let them solidify for a few minutes. I recommend serving with lavender tea for children and quality coffee for adults.
